Happy anniversary to me! It’s been exactly a year since I started this blog. If you told me a year ago that I’d be sharing recipes on this thing though, I would have laughed until I cried. It therefore seems fitting that my first post of 2015/my anniversary post highlights just how much this blog has changed since I published my first poorly written restaurant review. However, I’m not straying too far away from my comfort zone with this as this recipe covers something I can bake with relative ease: cookies.
I’ve never met a person who didn’t like a salty and sweet combo, so I was excited to try out a recipe for potato chip cookies, which were apparently pretty popular when my mom was a kid. After spending a nice portion of my evening plopping teaspoons of batter onto a baking sheet and pulling cookies out of the oven, reactions to this one were all across the board. I liked the buttery texture, but wanted something a bit more from the cookie; my mom loved them; my brother supposedly didn’t care for them yet ate at least ten. Since they were such a hit for some, I thought I’d share the recipe with you all. Some words of advice before you proceed: make sure you let these cookies rest overnight before tossing them into your waiting mouth because they are pretty lackluster while still cooling. Also, we jazzed ours up with some sprinkles, but feel free to riff on toppings however you like. With that said, look over the recipe below and see if it would be something you’d be interested in trying out, too!

Hhaha, it’s a tough thing to avoid! Since it makes 7 dozen, just bring it to a party- that way you can try not to eat them all.

Thank you! It’s been great connecting with you as well. I wanted to put chocolate chips in them and everyone told me no!! I’m so glad someone else thought the same thing- according to everyone else, chocolate doesn’t need to be in everything, but I think they’re crazy.
